In the last 10 years, Genoese pesto has become social, famous throughout the world, relaunched by the fact that the Pesto Genovese al Mortaio World Championships have restored lustre to one of the tastiest, most used, but also most copied sauces in the world.
As a child, every Genoese, at least those over fifty, had their own “Pesto World”, the simple luck of smelling the sauce freshly made in the mortar, the figure of a grandmother from behind who pounded and, as if by magic, created one of the most appreciated delicacies in the world.
Talking about Pesto in Genoa is a sort of mission, perhaps an obligation that our culinary history imposes on us, we will try to do it.
